Packed school lunches are a fairly new thing for us. In our particular situation my son’s school prohibits certain foods and requires that other foods be prepared a certain way. My son may not be the pickiest eater out there but he certainly is no celery or avocado hummus sandwich loving kid. We have pretty small menu of things he loves and will eat so we try to stick to those for the most part. In our case the school provides the lunch container to make life easier on the teacher. I like their choice in these Bento style containers because they stack easy and are tall enough for silicone cups.
We love cashew or almond butter and jelly sandwiches cut into fun shapes a lot. Grapes must be cut (sometimes we rebel on this one) but we use this as a chance for Joel to practice his cutting skills. Which makes him feel very big and important so, you know… the whole two birds one stone thing. I try to squeeze in a vegetable of some sort which when prompted Joel usually always chooses carrots. I’m cool with that, it’s a vegetable and I’ll take what I can get.
I don’t know about your kids but mine could live off fruit. No matter what is in front of him he always chooses fruit first. Being that we transport his lunch box in his back pack we try to stay away from very juicy fruits. So we usually go for freeze dried fruit. (GASP!!) I know there are plenty of cons to freeze dried over fresh however there are some pros worth discussing for sure. One very big one for me is NO ADDED SUGAR. When you already have a kid with tons of energy the extra sugar just isn’t necessary. Freeze dried fruits still hold wonderful flavor and lots of nutrients and a very long shelf life.
